# Eggnog Holiday Drink - Non-alcoholic Version ## ingredients * 5 Cups Milk * 4 Cinnamon Sticks * 1 Yoink of Cloves * 5 tsp Vanilla * 14 Egg Yolks * 1 1/2 Cups Sugar * 1 Quart of Half and Half (Or one pint of Heavy Cream) * 1/4 tsp Nutmeg * Additional Nutmeg to taste (Topping at the end) ## steps 1. Add milk, Cinnamon Sticks, Cloves, and 1 tsp of Vanilla into a large saucepan. Put on low heat for 5 minutes, stirring, so it doesn't burn. 2. Whisk eggs & sugar for a minute in a medium size bowl (Glass or metal is preferred) 3. Turn heat to med-high under milk, remove cinnamon sticks, stir constantly until milk reaches boiling (Do NOT leave unattended). Then, turn off the heat. 4. Slowly, whisk in 1/4 of the milk into the egg/sugar mixture. 5. Now pour the egg/sugar mixture back into the saucepan and whisk together. 6. Over med-high heat, whisk constantly for about 3 minutes. Ensure the temperature reaches 160F. It should thicken some. 7. Strain through a fine mesh sive into a large bowl. Cool for an hour at room temperature. 8. Stir half-and-half/heavy cream, remaining 4 tsps of vanilla, and nutmeg into the bowl. 9. Chill for at least 4-8 hours in a pitcher. ## notes * Yields: 1 pitcher * If you pour too fast, you get scrambled eggs * You can make a topping with the egg whites and some sugar if desired.
