# Herby Chicken Meatball Bowl
Delicious meal prep meal with a nice sauce!

## ingredients
* 1 15oz can chickpeas
* 1/2 tsp garlic powder
* 1/2 tsp onion pwder
* 1/2 tsp italian seasoning
* 2 tbsp parmesean cheese
* 1 large sweet potato
* salt
* 1/2 tsp cinnamon
* 1/4 tsp cumin
* 1 lb ground chicken
* 1 cup ricotta cheese
* 1 egg
* 1/2 cup panko bread crumbs
* 1 shallot (finely chopped)
* 2 green onions (finely chopped)
* 1/2 cups cilantro
* 1/4 cup dill
* zest of a lemon
* 1/2 tsp pepper
* 1 cup greek yogurt
* 1 cup basil
* 1/2 cup dill
* juice of a lemon
* olive oil
* 1 tbsp honey
* 1 jalepeno (seeds removed)
* 2 cloves of garlic

## steps
1. Preheat oven to 450F. Drain chickpeas, pat dry with a towel, and transfer to a baking sheet.
2. Add some olive oil, salt, garlic powder, onion powder, italian seasoning, and parmesean cheese. Toss until everything is fully coated. Transfer to oven and bake for 15 minutes.
3. Cut sweet potatoes into bite-sized pieces. Transfer to a baking sheet and add olive oil, salt, cinnamon, and cumin. Toss until well coated. Transfer to oven and bake for 15-20 minutes - until sweet potatoes are cooked through and started to brown.
4. In a bowl, combine the chicken, ricotta, egg, breadcrumbs, shallot, and green onions. Mix with your hands and roll into 2-tbsp-sized balls.
5. Add some oil to a pan set to medium heat. Cook the meatballs for 3-4 minutes on each side, until golden brown, and an internal temp of 165F.
6. In a blender or food processor, combine greek yogurt, fresh basil, fresh dill, juice of a lemon, olive oil, honey, jalepeno, garlic cloves, salt, and pepper. Blend until smooth.
7. Combine everything and pour the sauce on top!
