# Slow Cooker Mongolian Beef
Meat that falls apart! Perfect for a lazy meal prep week.

## ingredients
* 1/2 cup brown sugar
* 1/2 cup soy sauce
* 1 tbsp minced garlic
* 1 tbsp ground ginger
* 1 tbsp sesame oil
* 1 tbsp rice vinegar
* 1 tsp onion powder
* ~3-4 lb chuck roast (boneless)
* 4 heads broccoli
* 2 1/2 cups dry rice

## steps
1. Combine everything into a slow cooker.
2. Ensure meat is coated with sauce.
3. Cook on low for 8 hours. High for 4-5 hours.
4. Rip up meat with forks and serve over rice.
5. Add brocolli on the side.

## notes
* Low and slow is the trick!
* Makes ~8 servings if you add broccoli and rice.
